1. Create a new npc (or copy an existing one) and open it. You can either see some nodes to the right or not. If not, rightclick into the window and click on "Show All". Then it should look similar like in this picture, but probably with less nodes, since I already changed that one.

2. Now open the Asset Browser and search for body parts (they need to be meshes). You can enter "body", "hair", "leg", etc. into the search window or you just open up the folders of the individual npcs and see all their body parts (if you can't find them and you want, as an example, find the body of Roche, just type "roche" into the search window. You will see several meshes.Rightclick on one of them and then click on "Go to resource home". Now you should be in the folder containing all of Roches body meshes.).
Some NPCs have their whole body as a mesh, and some are made up of several parts. You can also add accessories like that. But remember that the body types always have to match. If you add a womans body to a males head, it might not add up correctly and you will have a floating neck, etc.

3. Now drag the mesh you chose into the entity. As you see, it does not work correctly yet. Now find the "character node" of the entity. At the bottom of the node, there is a little bobble. Click on the bubble and you can drag a line from the bubble to the new mesh you just added. A window will appear. Click on "Link using CMeshSkinningAttachment" and voilà, it should already work.

4. For you to be able to add this new mesh to an appearance, go to "Body Parts". There you click on the little + and add a new one. I chose the name "hansi", but if you have a mesh like arms or legs, you better give it that name. It will be easier to remember. Now if you have the new body part, click on the new mesh in this list to the right to add it.

5. Now go to "Appearance", create a new one and there you can add all the body parts you want. Also make sure that you add the head to your new appearance. You can see it right next to "Choose". After you've done that, you have a working new npc that can look completely different.
